A Sweet Vegan Dessert Variation of the Traditional Savory Guacamole
Ingredients:
- 2 ripe avocados
- 1/3 cup unsweetened organic cocoa powder (or more if needed to lend a deep brown color to mousse)
- honey, stevia or brown sugar—to sweeten according to preference
- ¼ to 1/3 cup of currants
- a few drops of vanilla extract
- a splash of Cognac
- light colored fruit slices and whipped RICE cream for decoration
Preparation:
- Scoop avocados out of their shell into mixing bowl
- Gradually add cocoa powder until mousse is dark chocolate brown
- Slowly add sweetener, tasting intermittently to achieve desired sweetness
- Plump currants in pre-boiled water for 1-2 seconds, drain & add to mix
- Add 2-3 drops of vanilla extract
- Add a splash of Cognac (or more if you prefer a stronger alcoholic kick)
- Mix well until completely smooth, homogenous & free of lumps
- Scoop into serving bowl
- Decorate with small bits of light-colored fruit & whipped RICE-cream (to keep it Vegan)
- Serve with biscotti, cinnamon crackers or other semi-sweet cookies.
